[It's been a few days since he fell asleep hard and then woke up just...remembering a lot of new things. Sure they all turned out good but they have him worried about things with Sora here and they have him also worried about his friends he just got back. Isa and Roxas and Xion. And how are the others handling things back home? Are they okay?

He's got a lot on his mind and there's only one cure all that he knows of. So he just has to find someone who can pull it off.]

Hey. Looking for someone up for a challenge. I'm searching for someone who can work with me to figure out how to make sea salt ice cream. I figure if we can get a recipe just right that we can really get it marketed out there for everyone in the fleet. So hit me up or let me know who you know that can help out.

I've found a recipe for ice cream that works with the default ship supplies, if you're comfortable handling liquid nitrogen and can obtain some from your Engineer. The flavorings are all either based on powdered protein gel or plant extracts, however. You'd need to come up with the sea salt on your own.

You can do that? Even with the weird texture of the protein gels? They don't seem like they'd manage to get solid enough. Or blue enough.

A fully upgraded kitchen has far more resources at its disposal, including powdered dairy substitute and synthetic milk and other forms of the gels, such as powder. If blue is a desired color, the blue-flavored drink can be concentrated by simmering it into a reduction. I will admit my particular recipe uses the edible kelp from our kelp tank as a thickener, which is an installation unique to my own ship.

The rest is a matter of chemistry and experimentation.

...Kelp? For ice cream? And wouldn't all of that stuff just sort of change the flavors? Sorry. I don't really know a lot about how the stuff is used here.

A component of it, to be more accurate. It contains an emulsifier - something to make the ice cream stick together better and have fewer ice crystals. If we had access to high-fat cream or more regular ingredients it wouldn't be strictly necessary, but given what we have--

Learning to use the resources we have is important, in case we get stuck on a long-haul drift.

So, just sea salt? Nothin' else to that? So, a case of sweet 'nd salty? Or be it like salt water taffy where it doesn't actually mean 'nything 'nd just a name 'nd really don't taste like salt? [Please, let him know, his brain is too curious to had let this pass. He wasn't as great on desserts as much as mains, but he was always happy at the idea of a challenge, and trying to make ice cream, let alone a salted version, sounded like a fun use of time.]

Well no. It's salty but it's also sweet. They're these blue ice cream bars you can get in Twilight Town and they're honestly amazing. So it has to be both. It's why it's sea salt ice cream.

Huh... though... only salt flavor? Does it really even have a flavor, guess not. [Sorry Lea, this is half going to be Remy just mumbling to himself as he works this out, trying to piece together a recipe in his mind.] I guess possible, maybe a little borin'. Know salted caramel be a thing, but can't 'magine just plain ice cream with saltiness to it. Gotta at least got vanilla to it.

'nd could just add some colorin' to get the blue to it... Or maybe it mixed with something else, though not many stuff actually be blue. What 'm sayin', we go to alien planets, will be a fruit or something out there that actually blue. [Oh yeah, he was actually talking to someone.] Ya willin' to do taste tests if I give it a go? Though, would be easier if we on a planet to get the supplies, got some on the ships but those stuff don't always transport and store well. Should be ok though, even if usin' frozen dairy, once it heats up to make the custard.

I mean, generally ice cream back home just be sweet. Different flavors, but sweet. Savory ones gettin' more popular, but that's more a foodie thing, hein? [Remy would had added a 'ya know' to the end of that, but... clearly not since, you know, the whole salt ice cream thing.
