I know a few, myself. But I'm not surprised to hear it, since there are so many people from so many different worlds.

It's a habit. My parents always raised me to be respectful, and bowing is... well, it's a pretty common thing to do in China. Doubly so in the restaurants. I can try to remember all that, though.
