Threefold, actually. First, for morale - both the appearance of the plants and the food, air, and medicines they produce help the crew feel less like they're trapped in an inorganic environment. I myself prefer to be surrounded by life. Plant life is no exception. Second - it reduces strain on the oxygen recyclers in the ship, and provides emergency backup in the case of a power outage. This is also the reason for the glowing fish; they can be used as a light source when it's dark. This did occur at least once during my previous stay here when raiding ships chased us into a nebula. Granted that the water use is higher, but as I myself do not require a water ration iT has in the past evened itself out.
And third - I'd like to see the Fleet be less reliant on the Atroma for everything. Each step towards self-sufficiency is a step in the right direction, in my opinion.

If you'd like to try keeping one in your quarters, we have a succulent similar to aloe we could make another starter from. All you would require is a container.
